Homity Pie is a traditional open vegetable pie. In our version we combine potatoes, onions, garlic and chopped spring onions to give flashes of green throughout. We heap the ingredients into a pastry case then top with a generous helping of grated cheese. This pie is great for eating warmed from the oven or kept in the fridge and eaten cold when required. Add a walnut, orange and white cabbage coleslaw with a chilled beer – simple and so satisfying. Serves 2-3
